Keep a bag of fruit in the freezer and you’re never more than 10 minutes away from cobbler in the oven. This easy batter-bake method works with anything from peaches to pineapple—just don’t forget the scoop of ice cream on top.
Ingredients
- ½ cup butter
- 1 cup all-purpose flour
- ¾ cup evaporated cane juice (or granulated sugar)
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1 cup milk
- ½ teaspoon salt
- 2 cups prepared fruit (see notes)
Instructions
- Preheat oven to 375°F.
- Melt butter in the bottom of an 8x8 microwave-safe baking dish.
- In a mixing bowl, whisk together flour, evaporated cane juice, baking powder, vanilla, milk, and salt.
- Pour the batter over the melted butter. Do not stir.
- Top evenly with prepared fruit.
- Bake for 30–40 minutes, or until the center is just set and the top is golden brown.
Notes
Use almost any fruit—fresh, frozen, or canned. Favorites include peaches, berries, apples, cherries, pineapple, or combinations.
Double the recipe for a 9x13 pan.
Best served warm with vanilla ice cream (don’t skip it).
