Melt butter in the bottom of an 8x8 microwave-safe baking dish.
In a mixing bowl, whisk together flour, evaporated cane juice, baking powder, vanilla, milk, and salt.
Pour the batter over the melted butter. Do not stir.
Top evenly with prepared fruit.
Bake for 30–40 minutes, or until the center is just set and the top is golden brown.

Use almost any fruit—fresh, frozen, or canned. Favorites include peaches, berries, apples, cherries, pineapple, or combinations.Double the recipe for a 9x13 pan.Best served warm with vanilla ice cream (don’t skip it).
